In the North, the filling for banh xeo, in addition to the same ingredients as other places, also adds shredded taro. 

 

When eating banh xeo, it must be accompanied by raw vegetables and dipped in sour fish sauce. Raw vegetables eaten as a side dish are usually vegetables that have a medicinal taste, benefit digestion, and clear heat such as: lettuce, mustard greens, fish mint, perilla, basil, cinnamon leaves, young cold rice leaves... In Can Tho There are more extract leaves, in Dong Thap, there are more Polyscias fruticosa leaves, in Vinh Long, there are more young mango leaves, and in Bac Lieu, there are more way leaves. In the Central regions, in addition to raw vegetables, tart figs and sour star fruit are also added. In An Giang, banh xeo is often eaten with wild vegetables from Cam Mountain, which not only have high nutritional value but also precious remedies such as: bamboo shoots, pronged branches, sesame shoots, wild toadstools,...
