Hypophthalmichthys sauce is a specialty of Tân Châu town, hypophthalmichthys is covered for a month then mixed with fermented glutinous rice and sugar, and covered about 1- 2 months before turing to a finished product. Hypophthalmichthys sauce can not be eaten without small pieces of eggplant broken by hands. It should be done with knife because the dish will not be delicous anymore. This dish needs various vegetables, especially with water lily and sesban flower.
