"Ba Trang" cake is one of the traditional dishes of the Chinese people. "Ba Trang" in Chaozhou language means salty rice cake. This is the dish most eaten by Chinese people during the Doan Ngo Festival.

Chinese Ba Trang cake has a very unique flavor, with a mixture of sweet and salty flavors from the main ingredients used to make the cake such as: sticky rice, shiitake mushrooms, meat, dried shrimp, sausage, salted eggs. , red beans, lotus seeds... 

 

The most time-consuming step of Ba Trang cake is soaking the rice. The rice must be soaked overnight to make the finished cake soft, flexible and fragrant. Besides, the meat used to make the cake filling must be marinated to suit the palate and carefully prepared before wrapping. Ba tra cake is often wrapped in bamboo leaves, dong leaves or banana leaves to help retain the original flavor of the ingredients and the traditional shape of the cake. After preparing and wrapping the cake, it will be boiled in water for 6 to 8 hours to ensure it is cooked evenly and soft, then taken out and hung up to drain.
