The main ingredients to make this beef cake include rice, coconut milk, and sugar. The process of making Ha Co beef cake is not too difficult, but creating a beautiful cake is not easy, because it also depends on the skill and ingenuity of the artisan.
To have a delicious and standard cake, artisans often choose to buy squirrel rice at the foot of Soc Son mountain. The rice is soaked in water until soft, then ground into powder and mixed with sugar. A incubation time of six hours or more is important for the cake to be puffy and spongy. Ms. Rofiah only uses simple tools such as a wood stove, baking pans and beautiful small terracotta lids. After heating the pan, Ms. Rofiah spread the dough evenly on the surface of the pan, quickly closed the lid and baked until the cake was done.
