Description

Du Du Dam (means stabbed papaya) is a Cambodian papaya salad. In Vietnam, this name comes from the fact that it is processed by pounding (crushing or pounding) in a mortar. The dish is widely sold in the Bay Nui area, Tri Ton district, An Giang province.

In Khmer, Du Du Dam is called bak-la-hong. The main ingredient is shredded papaya. For the dish to be delicious, the fruit chosen must be ripe so that "after eating the sweet taste in the throat". The remaining ingredient is shrimp paste. Some places use fish sauce, add some grated water spinach, cowpeas, and carrots.

With more than 10 years of experience, the owner of a popular restaurant in Tri Ton said that to keep the crunch, papaya is soaked in diluted salt water after grating. When displaying in the refrigerator, add ice cubes to chill.

When a customer orders, the shop owner puts sugar, salt, MSG, purple onions, garlic, chili and a piece of lemon into the mortar and stabs them evenly. Next, the chef adds papaya fibers, some spinach stems, herbs and cinnamon. The ingredients continue to be stabbed with less force to avoid being crushed.

Chewing slowly, you will feel the light sweetness of the crunchy papaya fibers, along with the salty but not too harsh taste of the fish sauce. Added resonance is the sour taste of lemon, the spicy taste of chili, the fatty taste of peanuts, and the aroma of vegetables, further stimulating the taste buds.

Du Du Dam is not served with dipping sauce like regular salads, because all the spices are mixed while being stabbed. You can order more duck eggs to eat with it like the locals.
